An Arizona native whose career and passion for the culinary industry started at the ripeful age of 17 as
he worked his way up the ranks in the kitchen. Without a “formal” culinary school education, he
attributes his culinary skills and education to chefs, kitchen managers, and peers he’s worked with over
his 25 years in the industry. His experience in fine dining and tavern cuisine has allowed him to create a
creative and mouthwatering menu that is befitting of the Ginger Monkey. His enthusiasm and love for
food not only begins in the kitchen but also resonates in the dishes he creates.
As Mark’s career continues to advance in our establishment we continue to welcome the experience
